Stir-Fried Mushrooms with Leeks
Ingredients
- Leek 2 pieces
- Pickled Chanterelles 25 oz
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Grated Pecorino Pepato Cheese 1 tablespoon
Step-by-Step Guide
Step 1
Trim the dark green leaves and roots from the leeks. Cut the remaining parts lengthwise into 4 sections, then crosswise into 5 cm pieces.
Step 2
Heat a wok over high heat.
Step 3
In a bowl, mix the mushrooms with 1 tablespoon of olive oil, season with salt and pepper. Place in the wok and stir-fry until soft, about 10 minutes. Transfer to a plate.
Step 4
In a bowl, mix the leeks with the remaining oil, season with salt and pepper. Place in the wok and stir-fry until golden brown, 15–20 minutes. Add the mushrooms 5 minutes before finishing.
Step 5
Remove from heat and sprinkle with Parmesan.
