Description

Ingredients
- Courgette 1 piece
- Tomatoes 2 pieces
- Cucumbers 2 pieces
- Orange Bell Peppers 2 pieces
- Garlic 3 cloves
- Salt to taste
- Red Long Chili Peppers to taste
- Ground Black Pepper to taste
- Chili jam to taste
- Bay leaf 1 piece
Step-by-Step Guide
Step 1
Peel the zucchini, cut it into cubes, and place it in a pan with hot oil.
Step 2
While the zucchini is frying, peel the cucumbers. Cut them into small cubes and add them to the zucchini.
Step 3
Make a cross-cut at the base of the tomatoes and blanch them in boiling water. Remove the skin and cut into large pieces.
Step 4
Add the tomatoes to the pan with the other vegetables and stew for about 10–15 minutes.
Step 5
Peel the garlic and add it to the pan (you can leave it whole or crush it).
Step 6
Add salt, black and red pepper, and a little chili sauce, and place the bay leaf (remember to remove it at the end of cooking).
Step 7
Remove the seeds from the bell peppers, red and yellow, and cut them into large squares.
Step 8
Add the peppers to the vegetables and continue to stew until the peppers are soft.
