Stamppot is a Dutch national dish.

Ingredients

  • Salad Potatoes 20 oz
  • Endive 15 oz
  • Semi-Smoked Sausage 10 oz
  • Butter 0 oz
  • Dry White Wine 10 fl oz
  • Bacon 5 oz
  • Milk 0 fl oz

Step-by-Step Guide

Step 1

Peel the potatoes and cut them into small cubes. Place them in a pot to boil with a pinch of salt.

Step 2

Remove the sausage from the outer packaging, but leave the inner one. Once the potatoes start boiling, add the sausage.

Step 3

Cut the bacon into small cubes and fry it in a pan without oil. Remove and let the fat drain on a paper towel. Pour a glass of white wine into the pan and let it reduce by half.

Step 4

Drain the cooked potatoes, add the butter and milk, and mash them into a puree.

Step 5

Gradually add the chopped endive to the hot puree until the potatoes absorb all 450 grams. Strain the reduced wine. Remove the sausage from the packaging and slice it into rings.
