Squid stuffed with garlic shrimp
Ingredients
- Squid 8 pieces
- Peeled Cooked Shrimp 10 oz
- Dry White Wine 15 fl oz
- Bay leaf 2 pieces
- Garlic 1 clove
- Chopped Sage Leaves 2 tablespoons
- Lemon 2 pieces
- Olive Oil 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Wash and clean the squid. In a large pot, bring 1 liter of water to a boil along with the wine, salt, and bay leaves. Add the squid and simmer for about 20 minutes, then drain and let cool.
Step 2
In a bowl, mix the shrimp, minced garlic, half of the parsley, and 2 tablespoons of lemon juice, seasoning with olive oil, salt, and pepper. Stuff the squid bodies with the mixture.
Step 3
In a clean container, mix the olive oil, remaining lemon juice, and parsley, adding salt and pepper to taste. Drizzle the dressing over the squid before serving.
