  • Avocado 1 piece
  • Rice Paper 12 pieces
  • Carrot 2 pieces

  • Soy Sauce 5 fl oz
  • Orange juice concentrate 2 tablespoons
  • Meyer Lemon Juice 2 tablespoons
  • Mirin 2 tablespoons
  • Chili Flakes ¼ teaspoon

Step-by-Step Guide

Step 1

Peel the avocado and cut it into thin strips (about 24 pieces). Peel the carrot and grate it coarsely to make 1 cup. Cut the fish into thin strips as well (about 12 pieces).

Step 2

In a skillet, pour in 2.5 cm of water, add the asparagus cut in half, and bring to a boil. Cover and cook for about 3 minutes until tender. Drain and rinse under cold water. Cut each piece in half lengthwise. The asparagus, avocado, and fish should be approximately the same length.

Step 3

In a bowl, pour boiling water and dip 1 sheet of rice paper until it becomes soft, about 30 seconds. Then transfer it to a board. Place 1 piece of fish, 4 pieces of asparagus, 2 pieces of avocado, 1 tablespoon of carrot, and 2 teaspoons of basil and mint on it. Roll each sheet tightly into a roll and cut diagonally in half. Repeat the same with the remaining rolls. Transfer to a serving plate.

Step 4

For the sauce, mix soy sauce, orange juice, lemon juice, mirin, and red pepper flakes in a bowl. Serve with the rolls.
