Description

Serving sprats in a crystal herring dish or a can on the table during New Year's Eve is a tradition dating back to Soviet times, one that shouldn't be abandoned but rather slightly reimagined. The combination of the simplest ingredients can be so striking that sprats suddenly transform from a caterpillar into a butterfly (in a culinary sense, of course): in this filling, the flavor of even high-quality sprats, which can have a hint of smoked rubber, is softened by a cheese and egg salad, while pickles completely eliminate any unpleasant taste. Try to find a good mustard that is not too spicy, but rather slightly sweet: just a couple of drops in the tartlets can significantly influence the final flavor.
