Step 1
Sort the spinach leaves, wash them in cold water, place them in a pot, add a little water, and cook over high heat with the lid on.
Step 2
Puree the cooked spinach and simultaneously prepare the milk sauce, which will be mixed with the spinach, adding salt, sugar, and a little ground nutmeg, after which everything should be heated well.
Step 3
To prepare the croutons, cut white bread into small slices, soak them in milk mixed with an egg and sugar, and fry in butter until golden brown.
Step 4
When serving, place the finished spinach on a round dish or in a deep plate and add the croutons around the edges as a garnish. You can also place poached eggs on top of the spinach.
