Description

Fresh spinach can be replaced with frozen; you will need 1 package. Sauté over medium heat with olive oil until the water evaporates.

Ingredients

  • Tarragon ¼ bunch
  • Fresh basil leaves 2 bunches
  • "Almette cheese with Maasdam cheese" 2 cans
  • Blue Cheese 10 oz
  • Parmesan Cheese 5 oz
  • Walnuts 0 oz
  • Dill ½ bunch
  • Garlic 2 cloves

Step-by-Step Guide

Step 1

Mix the soft cheeses until smooth.

Step 2

At the same time, cook the fresh spinach — add it to boiling salted water and cook for 2-3 minutes, then chop.

Step 3

In a blender, chop the walnuts, dill, tarragon, and garlic.

Step 4

Line the bottom of a baking dish with plastic wrap, leaving edges to fold over the top to cover the entire terrine later.

Step 5

Layer the mixture in the dish, either mixing or in layers (cheese paste — filling — parmesan — spinach — parmesan — filling — cheese paste).

Step 6

Fold the edges over, press down with a weight, and leave in the refrigerator overnight.

Step 7

Transfer to a serving plate and optionally garnish with sprigs of rosemary.
