- Fresh basil leaves 1 bunch
- Herbs 1 bunch
- Scallions 1 piece
- Salt to taste
- Feta cheese ½ cup
- Ground Black Pepper to taste
- Chicken Egg 2 pieces
Step-by-Step Guide
Step 1
In a small amount of boiling water, blanch the spinach until soft, drain, and rinse under cold water, then gently squeeze out excess water.
Step 2
In a bowl, mix the spinach, chopped herbs, finely chopped green onion, and crumbled feta. Season with salt and pepper.
Step 3
Heat a skillet and pour in the lightly beaten eggs. Cook for 2 minutes, then sprinkle the spinach mixture on top and cook for another 1-2 minutes until the eggs are set.
