Spicy Wine Sauce
Ingredients
- Water 5 fl oz
- Sugar 5 oz
- Corn Starch 2 teaspoons
- Cinnamon 1 piece
- Lemon ½ piece
- Ground clove 5 pieces
- Green peppercorns 5 pieces
- Red Grape Juice 5 fl oz
- Orange zest ½ piece
Step-by-Step Guide
Step 1
Take good quality wine. Bring sugar, water, spices, zest, and lemon (which can be cut into large pieces) to a boil and simmer for 5 minutes over medium heat.
Step 2
Pour in the wine, bring to a boil, let it simmer a bit, and then reduce the heat to medium or low to reduce. After 10 minutes, remove the spices or strain the mixture. Add the cornstarch, which should be previously dissolved in a tablespoon of boiled water (to prevent lumps in the sauce).
Step 3
After adding the cornstarch, bring the mixture back to a boil, simmer for 2 minutes to eliminate the cornstarch taste. Then reduce the heat to medium or low and cook until the desired thickness is achieved, stirring occasionally. Monitor the reduction and stir. Remember that the sauce will thicken as it cools. It can be used both hot and cold. It stores well in the refrigerator.
