
Spicy Quick Pickles with Vodka

Description
The brine (horseradish leaves, cherry leaves, currant leaves, dill umbrellas, garlic shoots) is available pre-made, but if possible, you can gather it yourself.
Ingredients
- Water 5 qt
- Salt 7 tablespoons
- Mild Chili Spice 2 pieces
- Vodka 10 fl oz
- Green peppercorns 1 teaspoon
- Allspice berries 1 teaspoon
- Star anise 4 pieces
- Ground Caraway 0.5 teaspoon
- Dill 0 oz
- Garlic 0 oz
- Cucumbers 5 lbs
Step-by-Step Guide
Step 1
Pour salt into the water, stir, and bring to a boil.
Step 2
Wash the cucumbers and all the greens thoroughly.
Step 3
Spread one bunch of brine ingredients on the bottom of the pickling container (I used a stainless steel pot).
Step 4
Add half of all the spices. Cut one red chili pepper on several sides and place it at the bottom as well.
Step 5
Arrange the cucumbers one by one on the bottom and then layer them. Alternate layers with peeled garlic and dill.
Step 6
Once all the cucumbers are placed, add all the remaining spices and place the cut pepper on top.
Step 7
Pour in half of the vodka.
Step 8
Cover everything with the second bunch of brine ingredients (horseradish leaves on top).
Step 9
Pour the boiling brine into the cucumbers, stir, and cover them.
Step 10
Close the container with a lid, let it cool — this will take about 5–6 hours, then place the container in the refrigerator.
Step 11
In total — after 24 hours, everything will be ready.
