Spicy Potatoes

Ingredients

  • New Potatoes 20 oz
  • Butter 5 oz
  • Orange zest 3 teaspoons
  • Garlic 1 clove
  • Dried parsnip 1 teaspoon
  • Ground Black Pepper to taste
  • Salt to taste

Step-by-Step Guide

Step 1

Boil the washed potatoes in salted water until tender, about 20 minutes (depending on size).

Step 2

Grate the zest of one orange and mix it with 75 grams of butter, ground black pepper, and the grated clove of garlic. Add 1 teaspoon of dried parsley and mix everything well again. Set aside while the potatoes are cooking.

Step 3

Meanwhile, preheat the oven to 430°F. Once the potatoes are ready, drain the water and let them sit for about 5 minutes. Line a baking tray with parchment paper, transfer the potatoes there, and gently crush them on top (you can make cuts along and across with a knife). Be careful not to deform the bottom of the potatoes. Spread our aromatic mixture on top, season with salt, and bake in the oven for 20–25 minutes until crispy and golden brown!
