Ingredients

  • Mackerel 2 pieces

  • Salt 3 tablespoons
  • Sugar 1 tablespoon
  • Bay leaf 3 pieces
  • Allspice berries 8 pieces
  • Green peppercorns 10 pieces
  • Coriander essential oil ½ teaspoon
  • Spanish onions to taste

Take medium-sized mackerel, thaw them.

Remove the head, entrails, and fins. Cut each fish in half.
