This is a very tasty and aromatic salad dressing for light spring salads.
Ingredients
- Ground coriander ¼ teaspoon
- Yellow Mustard Seeds ½ teaspoon
- Ground Cumin 0.1 teaspoons
- Carrot 5 fl oz
- Red Wine Vinegar 2 tablespoons
- Cilantro 4 stems
- Light Raisins, Seedless 2 tablespoons
- Honey 1 teaspoon
- Natural Yogurt 1 tablespoon
- Chili Flakes 1½ teaspoons
- Salt ¼ teaspoon
- Ground Black Pepper to taste
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Heat a skillet over medium heat. Add mustard seeds, coriander, and cumin. Sauté until fragrant, about 2–3 minutes. Pour in the carrot juice and simmer over medium heat until the volume is reduced by half, about 3 minutes.
Step 2
In a blender, place the raisins and pour the hot carrot juice over them. Let sit for 5 minutes until the raisins soften slightly. Then add the vinegar, cilantro, honey, yogurt, red pepper flakes, salt, and a bit of pepper. Blend until smooth, then gradually add the olive oil while blending.
