Ingredients
- Garlic 2 cloves
- Mild Chili Spice 1 piece
- Sugar 1 tablespoon
- Salt ½ teaspoon
- Rice Vinegar for Sushi 5 fl oz
- Courgette 1 piece
- Lime Juice 2 tablespoons
Step-by-Step Guide
Step 1
Remove the seeds from the chili and finely chop it. Transfer to a mortar and add the minced garlic, sugar, and salt. Grind into a paste. Transfer to a small bowl.
Step 2
Add the grated cucumber, vinegar, and lime juice. If desired, you can add a little water to achieve your preferred consistency. Let sit for 30 minutes before serving.
