Description
Any milk will do — the creamier, the more curds you'll get. You can use red chili pepper from a frozen Mexican mix for aesthetics, and for flavor, use spicy paprika powder for kimchi.
Ingredients
- Milk 0 qt
- Kefir 0 qt
- Large eggs 6 pieces
- Salt 4 teaspoons
- Garlic 2 cloves
- Toasted Cumin Seeds ½ teaspoon
- Paprika 2 teaspoons
- Mild Chili Spice 1 piece
- Dill 1 sprig
- Parsley 1 sprig
- Scallions 3 stalks
Step-by-Step Guide
Step 1
Heat the milk and kefir over the fire to 195°F.
Step 2
Slowly pour in the beaten eggs mixed with salt.
Step 3
After boiling, cook for 1 minute until curds form.
Step 4
Add garlic (sliced), spices to the hot cheese mass and let it steep for 30–40 minutes.
Step 5
Strain, mix, and place under a weight in the refrigerator for 5 hours.
