
Spiced Semolina Porridge with Saffron and Cashews

Ingredients
- Semolina 5 oz
- Sugar 1 tablespoon
- Coconut Milk 10 fl oz
- Ground Cinnamon ¼ teaspoon
- Ground Cardamom 0.2 teaspoon
- Roasted cashews to taste
- Saffron a pinch
Step-by-Step Guide
Step 1
Pour the coconut milk into a saucepan. Add the ground cardamom, ground cinnamon, and sugar. Place over medium heat and heat until boiling. Remove from heat and let steep covered for 5 minutes. Then strain the milk and return it to the heat.
Step 2
Add a pinch of saffron to the milk. Gradually sprinkle the semolina into the hot milk while stirring. Cook over high heat for about 5 minutes until thickened. Stir the porridge vigorously to prevent it from sticking and forming lumps.
Step 3
Remove the porridge from the heat. Garnish with cashews and serve.
