- Oat flakes 5 oz
- Coconut Milk 10 fl oz
- Pumpkin puree 5 tablespoons
- Coconut Sugar 2 teaspoons
- Ground Cinnamon 1½ teaspoons
- Ground Ginger ½ teaspoon
- Nutmeg a pinch
- Apple 1 piece
- Coconut Oil 1 tablespoon
- Brown Sugar 2 tablespoons
- Lemon Juice 1 tablespoon
- Ground Cardamom ½ teaspoon
- Walnuts 0 oz
Step-by-Step Guide
Step 1
Start with the topping. Slice the apple, removing the core. Grind the brown sugar into powder using a coffee grinder. Melt the coconut oil in a pan, add lemon juice, powdered sugar, 0.5 teaspoons of cinnamon, and cardamom. Stir well, then add the sliced apples and walnuts, cooking for 10 minutes over medium heat until the apples are soft but still hold their shape.
Step 2
While the apples are caramelizing, prepare the porridge. Place the oat flakes in a pot with the coconut milk and cook for 4–5 minutes, stirring constantly. Add a teaspoon of cinnamon, cardamom, nutmeg, pumpkin puree, and sugar, mix, and cook for another minute or two.
Step 3
Once the porridge is cooked, transfer it to a bowl, topping it with the fragrant apples and walnuts.
