Spiced Crust Ham with Maple-Mustard Sauce

Ingredients

  • Garlic 4 cloves
  • Ham 10 lbs
  • Ocean salt 1.5 teaspoons
  • Coriander essential oil 1 tablespoon
  • Lemon-Pepper Mix 1 tablespoon
  • Wheat Flour 1 tablespoon
  • Butter 3 tablespoons
  • Dijon Mustard 5 fl oz
  • Maple syrup 0 fl oz
  • Italian chopped parsley 2 bunches
  • Orange Bell Peppers 0.5 piece

Step-by-Step Guide

Step 1

In a bowl, mix the mustard and maple syrup. Cover with plastic wrap and refrigerate.

Step 2

Preheat the oven to 355°F.

Step 3

Trim the rind and excess fat from the ham.

Step 4

In a bowl, mash the minced garlic and finely chopped bell pepper with salt until it forms a paste. Grind the coriander seeds and pepper mix in a coffee grinder and mix with the flour, butter, and garlic paste.

Step 5

Rub the paste onto the ham and place it in a greased baking dish. Bake in the oven for about 1.25 hours, until a crust forms and the internal temperature of the meat reaches 150°F.

Step 6

Transfer to a platter and let rest for 15 minutes before serving. Serve with the sauce, garnished with parsley.
