Ingredients

  • Star anise 3 pieces
  • Butter 0 oz
  • Vegetable Oil 0 fl oz
  • Brown Sugar 0 oz
  • Cinnamon 2 pieces
  • Ginger 0 oz
  • Paprika 2 tablespoons
  • Mild Chili Spice 1 piece
  • Cilantro 0 oz
  • Green peppercorns 3 pieces
  • Ground Black Pepper to taste
  • Green Apples 6 pieces
  • Garlic 4 cloves
  • Onion 5 oz
  • Apple Cider Vinegar 0 fl oz
  • Salt to taste
  • Raisins 5 oz

Step-by-Step Guide

Step 1

Peel the apples, remove the core, and cut them into cubes. Peel and finely chop the onion and ginger.

Step 2

Melt the butter in a deep saucepan, then add the vegetable (or olive) oil.

Step 3

Add the chopped ginger and onion. Stir to ensure the oil is well absorbed by the vegetables. Leave to simmer until the mixture takes on a characteristic golden color, but does not start to brown.

Step 4

Finely chop the garlic. Add it to the saucepan. Simmer for a bit longer. Add the apples, raisins, and alcohol (or vinegar). Mix well. Once the apples release their juice, reduce the heat.

Step 5

Add the star anise and cinnamon (it's better to use sticks, but powdered can work too). Also add the sugar and salt. Leave on low heat, stirring occasionally.

Step 6

Add sweet paprika and a bit of ground black pepper. Finely chop the hot pepper and add it to the chutney. Also add the finely chopped cilantro.
