Spelt porridge with mushrooms
Ingredients
- Spelt 5 oz
- Dried Chinese mushrooms 0 oz
- Pickled Chanterelles 5 oz
- Vegetable Oil 0 fl oz
- Mushroom seasoning 15 fl oz
- Herbed Tofu 5 oz
- Water 0 fl oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients. Soak the dried porcini mushrooms in hot water for 30 minutes.
Step 2
Drain and chop the porcini mushrooms into small cubes.
Step 3
Bring the mushroom broth to a boil and add the spelt and porcini mushrooms.
Step 4
Cover with a lid and cook on low heat until the grains are soft, about 40 minutes.
Step 5
Slice the champignon mushrooms thinly.
Step 6
Heat the vegetable oil in a pan and sauté the champignon mushrooms until golden.
Step 7
Blend the soft tofu with water in a blender until creamy.
Step 8
Add the tofu cream to the pot with spelt 5 minutes before cooking is finished.
Step 9
Add the sautéed champignon mushrooms (saving a few for garnish), season the porridge with salt and pepper to taste, and stir.
Step 10
Serve the porridge in bowls while hot, garnished with slices of champignon.
