Spanish-style Beans with Spinach

Ingredients

  • Onion 10 oz
  • Sun-Dried Tomatoes 5 oz
  • Olive Oil 5 fl oz
  • Garlic 4 cloves
  • Smoked salt ½ spoons
  • White Beans 30 oz
  • Spinach 20 oz
  • Vegetable Oil 0 fl oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Chop the tomatoes and coarsely chop the onion. Sauté the vegetables in vegetable oil, seasoning with salt and pepper (half a teaspoon each). Cook, stirring, until the onion turns brown, about six to eight minutes.

Step 2

Add finely chopped garlic and sprinkle with sweet smoked paprika. Stir the vegetables continuously for the next minute.

Step 3

Drain the liquid from the cans of beans, trim the spinach stems, and add them to the sautéed vegetables. Pour in a cup of water, add half a teaspoon of salt, stir well, cover, and cook for five minutes, stirring the vegetables a couple of times. If needed, season the result with salt and pepper, and drizzle with the remaining oil.
