Spanish Potatoes Patatas Bravas
Appetizers • Serbian
Description
This classic Spanish appetizer is usually served in bars with a glass of wine or a shot of brandy. Therefore, it's important that the potato pieces are small—literally one bite.
Ingredients
- Potato 30 oz
- Vegetable Oil 35 fl oz
- Olive Oil 0 fl oz
- Onion 1 head
- Paprika 1 tablespoon
- Cayenne Pepper ½ spoons
- White Pepper (whole) ½ spoons
- Wheat Flour 2 spoons
- Chicken Broth 5 fl oz
- Garlic 1 clove
- Salt to taste
Step-by-Step Guide
Step 1
Prepare the necessary ingredients.
Step 2
Cut the potatoes into bite-sized pieces, add them to boiling water, and cook for 5 minutes. Then, drain the water and set the potatoes aside while preparing the sauce.
Step 3
Sauté the diced onion in olive oil until it turns translucent, adding a pinch of salt.
Step 4
Add the minced garlic, paprika, cayenne pepper, and white pepper, and mix well.
Step 5
Add the flour and stir for about 3 minutes.
Step 6
Then pour in the broth and cook, stirring, for another 8-10 minutes.
Step 7
Then remove from heat and blend the sauce with an immersion blender.
Step 8
Heat vegetable oil.
Step 9
Fry the potatoes in it until golden brown. Transfer to paper towels to remove excess fat.
Step 10
Patatas bravas can be served in different ways: you can drizzle the potatoes with the sauce or place the sauce alongside the potatoes, adding some mayonnaise or aioli to it.
