Spaghetti with Zucchini Naran-style
Ingredients
- Vegetable Oil 15 fl oz
- Courgette 20 oz
- Basil 5 oz
- Olive Oil 0 fl oz
- Spaghetti 10 oz
- Parmesan Cheese 5 oz
- Salt to taste
Step-by-Step Guide
Step 1
Prepare all the ingredients.
Step 2
Slice the zucchini into thin half-moons. If the zucchini are small, about the size of a cucumber, cut them into thin rounds.
Step 3
Finely chop the basil.
Step 4
Heat vegetable oil in a large saucepan.
Step 5
Sauté the zucchini in oil until golden brown, then transfer them to a paper towel to remove excess fat.
Step 6
Sprinkle the zucchini with salt.
Step 7
Cook the spaghetti according to the instructions, then drain the water, leaving 2 cups.
Step 8
Place the spaghetti in a large skillet or pot, add olive oil, zucchini, and basil, and put it on the heat.
Step 9
Gradually add the pasta cooking water while stirring constantly to achieve a creamy sauce texture. You may not need to use all of the water.
Step 10
Gradually stir in the grated Parmesan cheese, aiming for a creamy consistency; if needed, add more pasta cooking water.
Step 11
Serve the spaghetti with zucchini immediately, optionally garnished with Parmesan.
