Spaghetti with Young Potatoes and Zucchini
Ingredients
- New Potatoes 3 pieces
- Courgette 6 pieces
- Spaghetti 15 oz
- Olive Oil 5 fl oz
- Salt to taste
- Ground Black Pepper to taste
- Asiago cheese to taste
Step-by-Step Guide
Step 1
Cut the potatoes and zucchini into small thin sticks. Bring a pot of salted water to a boil and add the potatoes. Cook for 8 minutes. Add the spaghetti and cook, stirring, for another 8 minutes.
Step 2
Then add the zucchini and cook for another 4 minutes.
Step 3
In a serving bowl, pour in 60 ml of the spaghetti cooking water. Drain the pasta with the vegetables and transfer to the serving bowl. Add olive oil, salt, and pepper to taste. Then sprinkle with grated cheese, mix lightly, and serve.
