Spaghetti with Tomato and Basil

Ingredients

  • Spaghetti 10 oz
  • Marinated cherries 15 oz
  • Garlic 2 cloves
  • Olive Oil 3 tablespoons
  • Fresh basil leaves 1 bunch
  • Salt to taste

Step-by-Step Guide

Step 1

Heat the olive oil in a pan, add the whole peeled garlic cloves and sauté them to infuse the oil with flavor until the garlic is golden brown, then remove it from the pan and add the halved tomatoes. Sauté them for 2-3 minutes over high heat, stirring constantly, then season with salt, reduce the heat, and cover to let them simmer and release their juices.

Step 2

In a pot, bring water to a boil for the pasta. Once boiling, add salt (I use coarse sea salt) and fully submerge the pasta in the boiling water. Depending on the type of pasta used, cook it for 2-3 minutes less than the package instructions. Remove the pasta from the pot using a slotted spoon, tongs, or drain it in a colander, and immediately place it in the pan with the tomatoes. Mix thoroughly, add a few basil leaves, torn by hand, mix again, and remove from heat.

Step 3

Serve on plates using a fork and spoon to ensure the sauce is evenly distributed, garnish with fresh basil leaves, and optionally sprinkle with grated hard cheese (traditionally Parmesan).
