Spaghetti with Pistachio and Broccoli Pesto
Ingredients
- Spaghetti 20 oz
- Broccoli 4 cups
- Olive Oil 2 tablespoons
- Pistachios ¾ cup
- Grated Pecorino Pepato Cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Lemon 1 piece
Step-by-Step Guide
Step 1
In one pot, cook the spaghetti, and in another, cook the broccoli.
Step 2
For the pesto, blend half of the cooked broccoli with olive oil, Parmesan (½ cup), pistachios (½ cup), lemon zest, and juice until smooth. Season with salt and pepper. If the mixture is too thick, you can add water.
Step 3
Add the cooked broccoli to the spaghetti, mix in the pesto, and sprinkle with the remaining Parmesan and pistachios.
