Description

The quantities of ingredients are specified for a single, but quite substantial serving, or for two smaller servings. However, if you're planning to have lunch or dinner for two, or even more people, you will definitely need to increase the quantities of the ingredients.

Ingredients

  • Spaghetti 5 oz
  • Mussels 5 oz
  • Onion 1 head
  • Garlic 2 cloves
  • Passata Tomato Sauce 4 spoons
  • Fresh basil leaves 1 tablespoon
  • Paprika ½ spoons
  • Ground Black Pepper to taste
  • Salt a pinch
  • Spiced Tomato Juice 0 fl oz

Step-by-Step Guide

Step 1

Finely chop the onion and garlic, then sauté them in a saucepan with olive oil until softened. Add the tomato paste, juice, and spices, and cook for about 5 minutes over medium heat. Purée the mixture, return it to the heat, and add the mussels. Cook for 3–5 minutes (I strongly advise against cooking them longer, as mussels can quickly turn rubbery).

Step 2

Cook the spaghetti in an adequate amount of boiling salted water, then drain in a colander.

Step 3

In a skillet, heat a small amount of olive oil and sauté the spaghetti for 3 minutes. Add the sauce, stir vigorously, reduce the heat, and cover with a lid. After 2 minutes, the pasta is ready.

Step 4

Optionally, sprinkle with finely chopped parsley.
