
Spaghetti with Cherry Tomatoes and Bottarga

Description
To ensure the spaghetti is ready when it's time to mix with the sauce, start boiling the water for the spaghetti at the same time you begin preparing the sauce. Enjoy your meal!
Ingredients
- Olive Oil 5 fl oz
- Minced garlic 1 clove
- Chopped Sage Leaves 2 tablespoons
- Red Long Chili Peppers a pinch
- Salt to taste
- Spaghetti 10 oz
- Saffron 8 pieces
- Marinated cherries 5 oz
- Bottarga 5 oz
Step-by-Step Guide
Step 1
Sauté the tomatoes in a non-stick skillet covered without oil for 1 minute.
Step 2
Add a little olive oil and sauté covered for another minute.
Step 3
Remove the skillet from heat and let the tomatoes cool, then peel them.
Step 4
While the tomatoes are cooling, heat the olive oil in a shallow pot and add garlic, basil, saffron, and red pepper. Stir and add the tomatoes. Add salt and pepper.
Step 5
Add the cooked spaghetti to the tomatoes, quickly toss to distribute the sauce throughout the dish, and check for seasoning.
Step 6
Serve the spaghetti on large plates, drizzled with a few drops of olive oil and topped with thin slices of bottarga.
