  • Spaghetti 20 oz
  • Black truffles 1 piece
  • Olive Oil 2 tablespoons
  • Grated Pecorino Pepato Cheese 5 oz

Step-by-Step Guide

Step 1

Grate the Pecorino Romano cheese using a fine grater. For this recipe, it's better to use a hard, saltier, and aged cheese.

Step 2

Grate the truffle into thin slices using a fine grater.

Step 3

Cook the spaghetti until al dente.

Step 4

Reserve a ladle of the pasta water before draining.

Step 5

Drain the water and transfer the spaghetti to a serving bowl, immediately adding half of the Pecorino and the olive oil, along with a bit of the pasta water to achieve the desired sauce consistency and to prevent the spaghetti from sticking together. Mix well.

Step 6

Serve, topped with thinly sliced truffle.
