Spaghetti Vongole in Wine
Ingredients
- Spaghetti 5 oz
- Mild Chili Spice ½ piece
- Garlic 2 cloves
- Tomatoes 5 oz
- Clams (Vongole) 20 pieces
- Chicken Seasoning to taste
Step-by-Step Guide
Step 1
Soak the clams in salted water 3-4 hours before cooking to remove any remaining sand.
Step 2
In olive oil, sauté the chili and garlic until fragrant (remove seeds from the chili pepper). Add the tomatoes and simmer on medium heat, then add the vongole and pour in one glass of dry white wine, season with salt, pepper, and add seasonings to taste. Cook until all the clams open; if the wine evaporates, you can add another glass or half a glass.
Step 3
Remove from heat, add the cooked spaghetti to the pan with the vongole sauce, and mix.
