Description
Spaghetti in cream sauce with salmon and arugula
Ingredients
- Spaghetti 10 oz
- Salmon 10 oz
- 10% cream 10 fl oz
- Whole egg 2 pieces
- Thyme to taste
- Garlic 2 cloves
- Olive Oil 3 tablespoons
- Tomatoes 2 pieces
- Arugula 0 oz
- Ground Black Pepper to taste
- Fish Oil 0 fl oz
Step-by-Step Guide
Step 1
Cook the spaghetti until al dente. Drain most of the water, leaving some in case the sauce becomes too thick.
Step 2
In a hot skillet, pour in the olive oil, add thyme, and add finely chopped garlic. Sauté until golden brown. Then pour in the cream and add the beaten yolks. Mix well, add the fish sauce, and season with pepper. Remove from heat.
Step 3
Rinse the salmon steak, pat dry with a paper towel, and grill in a skillet for 3-4 minutes on each side. Remove from heat and let it rest. Then flake into pieces along the grain.
Step 4
Add the spaghetti to the creamy fish sauce in the skillet, mix thoroughly, and add some of the water used to cook the spaghetti.
Step 5
Cut the tomatoes into wedges, sauté in the skillet for a couple of minutes, then add the arugula, blanch for another minute, season with salt, and add to the spaghetti, mixing well.
Step 6
Serve in a 'nest' shape, placing pieces of salmon in the center.
