Description

A recipe builder. You can add wine vinegar and cilantro and serve it as a salad. For this recipe, use only pitted olives and Kalamata olives. Preferably in their own juice rather than in brine.

Ingredients

  • Spaghetti 10 oz
  • Kalamata olives 12 pieces
  • Marinated cherries 5 oz
  • Garlic 4 cloves
  • Basil 10 stems
  • Capers 2 tablespoons
  • Parmesan Cheese 0 oz
  • Olive Oil 4 tablespoons
  • Mild Chili Spice to taste
  • Salt to taste
  • Olives stuffed with lemon 12 pieces

Step-by-Step Guide

Step 1

Crush the olives and Kalamata olives with the back of a knife, remove the pits, and tear them into large pieces.

Step 2

Crush the cherry tomatoes by hand over a salad bowl, trying not to splash the juice. Tear them into large pieces.

Step 3

Crush the garlic cloves with a knife and chop them coarsely.

Step 4

Remove the basil leaves from the stems and tear them into large pieces.

Step 5

In a salad bowl, mix the crushed cherry tomatoes, olives, Kalamata olives, capers, garlic, and coarsely torn basil leaves.

Step 6

Add 3–4 tablespoons of olive oil and coarsely chopped chili pepper to taste, and mix well.

Step 7

Cook the spaghetti until al dente, drain the water, and mix with the crudo sauce.

Step 8

Serve, sprinkled with finely grated Parmesan.
