Spaghetti Carbonara with Wild Garlic
Ingredients
- Spaghetti 15 oz
- Wild Garlic Greens 1 bunch
- Pancetta 5 oz
- Egg white 4 pieces
- 33% Cream 10 fl oz
- Parmesan Cheese to taste
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Cook the pasta in boiling salted water until al dente.
Step 2
Using a mixer, beat the yolks, cream, and finely chopped wild garlic. Then add Parmesan, and season with salt and pepper to taste.
Step 3
Heat a pan with a small amount of olive oil. Add thinly sliced pancetta. Sauté for a few minutes, then add the pasta. Cook for a while, then pour in the egg-cream mixture. Stir for 1 minute and remove from heat.
Step 4
Serve, sprinkled with Parmesan and drizzled with good olive oil.
