Spaghetti Carbonara with Prosciutto di Parma
Ingredients
- 10% cream 5 fl oz
- Whole egg 3 pieces
- Parmesan Cheese 5 oz
- Parma Ham 5 oz
- Olive Oil 3 spoons
- Spaghetti to taste
Step-by-Step Guide
Step 1
Add the pasta to boiling salted water (you can also add Vegetta seasoning to taste). When making carbonara, you can use either spaghetti or other types of pasta.
Step 2
For the sauce, separate the yolk from the egg whites. We will need 3 yolks. Place them in a deep bowl.
Step 3
Pour 100 grams of cream into the egg yolks. Whisk together.
Step 4
Add 3 pinches of Parmesan cheese. Mix well.
Step 5
In a well-heated skillet with olive oil, sauté the Parma ham for 2–3 minutes.
Step 6
Turn off the heat. Wait for the ham to settle, then pour in the sauce.
Step 7
Turn on low heat and bring to a simmer, stirring constantly. It is very important to keep stirring the sauce throughout the cooking process; otherwise, the egg yolks will curdle, resulting in a lumpy sauce.
Step 8
Cook the sauce with ham for another 5–7 minutes.
Step 9
Serve in two ways: 1) Place the pasta on a plate, drizzle with the ham sauce, and sprinkle with the remaining cheese; 2) Combine all the pasta in a large deep dish, add the bacon sauce, mix well, and then serve on plates, garnished with cheese.
