
Spaghetti Carbonara

Ingredients
- Spaghetti 5 oz
- Pancetta 5 oz
- Hard Cheese 0 oz
- Whole egg 2 pieces
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Bring well-salted water to a boil. Cook the spaghetti until al dente. Reserve some pasta water, as it may be needed later, and drain the rest.
Step 2
Slice the pancetta.
Step 3
While the pasta is cooking, heat a skillet and sauté the pancetta until golden brown, then remove from heat.
Step 4
Place the egg yolks in a bowl.
Step 5
Add grated cheese to the egg yolks.
Step 6
Beat the egg yolks with grated cheese until smooth.
Step 7
Return the skillet with the pancetta to low heat and add about 50 ml of pasta broth.
Step 8
Add the spaghetti to the pot and stir well until the boiling stops. Most of the water should evaporate.
Step 9
Remove the skillet from the heat and add the egg yolks with the cheese, stirring quickly until the yolks thicken. If the sauce seems too thick, add a little more pasta broth.
Step 10
Season with salt and pepper to taste, then serve.
