Spaghetti Bolognese with Sausages and Zucchini
Ingredients
- Sausages 2 pieces
- Lean Beef 20 oz
- Onion 1 head
- Garlic 2 cloves
- Carrot 1 piece
- Celery stalk 1 piece
- Courgette 1 piece
- Olive Oil 0 fl oz
- Balsamic Vinegar 2 tablespoons
- Baking Tomatoes 30 oz
- Passata Tomato Sauce 1 teaspoon
- Spaghetti 15 oz
- Parmesan Cheese to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Place a large skillet with a thick bottom over medium-high heat. Squeeze the meat out of the sausages.
Step 2
Add the ground beef and sausage meat to the skillet with olive oil. Cook for 5 minutes, stirring regularly with a wooden spoon.
Step 3
Finely chop the onion, carrot, and celery. Grate the zucchini on a coarse grater. Press the garlic. Add the vegetables to the skillet with the meat.
Step 4
Reduce the heat to medium-low and cook for 10–15 minutes or until the vegetables are soft, stirring occasionally.
Step 5
Add the balsamic vinegar and canned tomatoes. Add 1 cup of water.
Step 6
Add the tomato paste and a pinch of black pepper. Mash the tomatoes with a spoon, reduce the heat to low, and cover to simmer for 2–3 hours or until the sauce thickens.
Step 7
About 15 minutes before serving, boil the pasta in a large pot of salted boiling water according to the package instructions, then drain, reserving a full cup of starchy cooking water.
Step 8
Add the pasta to the sauce, mix in some of the reserved pasta water if the sauce is too thick, and stir the pasta over the heat.
Step 9
Using tongs, serve onto plates, then serve topped with grated Parmesan.
