Spaghetti alla Bolognese
Ingredients
- Tomatoes 4 pieces
- Lean Beef 10 oz
- Onion 1 piece
- Garlic 3 cloves
- Ground Black Pepper to taste
- Fresh basil leaves 1 bunch
- Red Grape Juice 5 fl oz
- Oregano 1 teaspoon
- Grated Pecorino Pepato Cheese to taste
- Spaghetti 20 oz
- Olive Oil 1 tablespoon
- Ocean salt 1 teaspoon
Step-by-Step Guide
Step 1
Make cross-shaped cuts on the tomatoes and pour boiling water over them for 2–3 minutes, covering with a lid. Drain the water and peel the tomatoes.
Step 2
Peel the onion and garlic and place them in a blender along with the tomatoes and basil. Blend until smooth.
Step 3
Pour the resulting sauce into a saucepan, add three tablespoons of olive oil, mix, and place on high heat. Bring to a boil, then reduce the heat to a level that allows the sauce to simmer gently without splattering.
Step 4
Meanwhile, heat a dry skillet and sauté the ground beef until golden brown, making sure it doesn't clump together. Immediately add the browned beef to the sauce, mix; pour in the red dry wine, mix again, and cook the sauce until the alcohol smell disappears and excess liquid evaporates.
Step 5
Five minutes before the sauce is done, season with salt, pepper (if desired), add dried oregano, and mix.
Step 6
In a large pot of boiling salted water with one tablespoon of olive oil, cook the spaghetti until al dente.
Step 7
Drain the cooked pasta and serve the spaghetti on plates. Top with the sauce, garnish with a basil sprig, and sprinkle with grated Parmesan cheese (to taste).
