Spätzle with Eggs and Ramps
Ingredients
- Spätzle 15 oz
- Shallot 1 piece
- Chicken Egg 2 pieces
- Egg white 3 pieces
- Chives 1 bunch
- Ramps 1 bunch
- Salt to taste
- Ground Black Pepper to taste
- Olive Oil to taste
Step-by-Step Guide
Step 1
Heat olive oil in a skillet over medium heat. Add finely chopped shallot and sauté until soft for a few minutes.
Step 2
Add spätzle and cook, stirring constantly, for 3 minutes.
Step 3
Meanwhile, in a small bowl, lightly beat the egg whites and eggs. Pour the mixture into the skillet.
Step 4
Cook, stirring, until the eggs are set. Remove from heat and add finely chopped chives and finely chopped ramps. Mix well. Season with salt and pepper to taste.
