Ingredients
- Olive Oil 2 tablespoons
- Cold-smoked trout 20 oz
- Meyer Lemon Juice 1 tablespoon
- Fennel 1 piece
- Arugula 5 oz
- Chives 3 tablespoons
Step-by-Step Guide
Step 1
Slice the fish into thin pieces and arrange them on the edges of the plates.
Step 2
In a small bowl, mix the olive oil and lemon juice. Season with salt and pepper.
Step 3
Using a mandoline, slice the fennel very thinly and place it in a bowl. Add the arugula, drizzle with half of the dressing, and mix well. Divide the salad onto the plates next to the fish and drizzle with the remaining dressing. Sprinkle with chopped chives and serve.
