  • Canned Peaches 30 oz
  • Ketchup 0.3 cups
  • Apple Cider Vinegar 0.3 cups
  • Chili jam 0.3 cups
  • Worcestershire Sauce 0.3 cups
  • Salt to taste
  • Black Pomegranate Molasses 2 tablespoons
  • Ground ancho chili pepper 1 teaspoon
  • Rice Vinegar for Sushi 2 tablespoons
  • Baking Tomatoes 1 can
  • Ground Black Pepper to taste
  • Cayenne Pepper 2 tablespoons
  • Veal Tenderloin 15 lbs

Step-by-Step Guide

Step 1

In a saucepan, whisk together the sugar, 1/2 cup of canned peaches, ketchup, chili sauce, vinegar, Worcestershire sauce, 1 teaspoon of salt, molasses, ground chipotle pepper, and crushed tomatoes. Bring the mixture to a boil over medium heat. Cook for about 30 minutes until it thickens. Then transfer to a blender and blend until smooth. Pour the sauce into a bowl and add the remaining canned peaches.

Step 2

Prepare the smoker. For this recipe, a boneless beef rib roast works best. Rub the meat with the remaining salt, black pepper, and cayenne pepper. Place the meat in the smoker and cook until done.

Step 3

Once the meat is cooked, place it on a plate, cover with foil, and let it rest for 20 minutes. Then slice and serve with the sauce. Enjoy your meal!
