Smoked Chicken Goujons with Garlic Aioli
Ingredients
- Safflower Oil 15 fl oz
- Smoked Chicken 10 oz
- Wheat Flour 5 oz
- Whole egg 2 pieces
- Sparkling water 5 fl oz
- Romaine lettuce 1 head
- Lemon 1 piece
- Olive Oil 0 fl oz
- Dijon Mustard 1 teaspoon
- Garlic 1 clove
- Salt to taste
- Champagne Vinegar ½ teaspoon
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Heat a deep fryer or a deep skillet filled one-third with sunflower oil to 355°F. If you don't have a thermometer, you can check the temperature by dropping a piece of bread into the oil. At the right temperature, the bread will brown in about 60 seconds.
Step 2
For the garlic aioli, mix the egg yolk, mustard, finely chopped garlic, vinegar, and 2 tablespoons of drinking water, add seasonings, and whisk well until thick. In a separate bowl, combine olive oil and sunflower oil, and add it to the mixture drop by drop while constantly stirring. Once the mixture thickens further (after about two tablespoons), add the oil more quickly (by the tablespoon), continuing to stir. Add seasonings.
Step 3
Cut the smoked chicken breasts into long thin strips. Prepare the batter by mixing flour, egg yolk, sparkling water, and whisking.
Step 4
Dip the chicken pieces into the batter and drop them into the fryer or skillet. Fry for 2–3 minutes. Place on parchment paper.
Step 5
Chop the romaine lettuce, drizzle with lemon juice and olive oil. Add seasonings. Arrange on serving plates. Top with goujons and drizzle with aioli sauce.
