Description

Siberia's answer to Japanese sashimi — sliced omul, a regal fish that inhabits only the cold northern rivers. The fish, which is frozen solid, is cleaned with a sharp knife and sliced into thin pieces, leaving a slightly thawed skin. The small bones are cut along with the flesh, so they are not felt in the mouth. The prepared slices are refrozen and served straight from the freezer. To simply enhance the flavor of the fish, coarse sea salt and pepper are sufficient. A classic fish sauce — an aromatic, moderately sweet honey-soy mixture — also works well. In Yakutia, the sauce for the sliced fish is referred to as 'makalovo.'

Slightly thaw the frozen omul to make it easier to slice. Remove the skin.

Then, using a mandoline or a sharp knife, slice into thin long strips. Roll them into rolls. Place the rolls in the freezer for at least half an hour, preferably for an hour.

Mix the honey with soy sauce until fully combined. Serve the sashimi with medium-grain sea salt, coarsely ground black pepper, and sauce.
