Description
Skordalia should be prepared quickly so that the potatoes do not cool down. Skordalia is a garlic dip, a dish from Greek cuisine. It is most often served as a hot appetizer, but it can also be served as a side dish with meat and fish dishes. In the traditional recipe, 1 head of garlic and 1 lemon should be used. I decided to reduce the proportions of these ingredients. Skordalia pairs perfectly with fried zucchini, kolokithokeftedes (zucchini fritters), fried fish like cod, fried eggplant, traditional beet salad, etc.
Ingredients
- Salad Potatoes 5 pieces
- Garlic 4 cloves
- Lemon ¼ piece
- Vegetable Oil 5 fl oz
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Wash the potatoes and boil them in their skins until cooked.
Step 2
Peel the garlic and crush it with salt.
Step 3
Squeeze the juice from the lemon and combine it with the oil.
Step 4
Peel the boiled potatoes and mash them with the garlic, gradually adding the lemon juice mixed with oil.
Step 5
Mash everything until a homogeneous mass is obtained.
