Simple Eggplant Puree
Ingredients
- Eggplants 25 oz
- Garlic 3 cloves
- Salt to taste
- Cilantro ½ bunch
- Ground Black Pepper to taste
- Olive Oil 0 fl oz
Step-by-Step Guide
Step 1
Wash the eggplants and remove the stems. Make several cuts along the eggplants. Grease a frying pan or baking sheet with a small amount of oil. Place the prepared eggplants on it.
Step 2
Place the eggplants in an oven preheated to 340°F and bake for 45–60 minutes, depending on the size of the vegetables.
Step 3
Transfer the cooked eggplants, along with the skin, into a blender. Add oil, salt, black pepper, chopped cilantro, and squeeze in the garlic.
Step 4
Blend until you achieve the desired puree consistency. It can be served hot or cold.
