Shrimp Wontons with Chili Jam

Ingredients

  • Safflower Oil 15 fl oz
  • Tiger shrimp in brine 6 pieces
  • Scallions 4 pieces
  • Grated Ginger Root 1 piece
  • Garlic 2 cloves
  • Spring roll wrappers 12 pieces
  • Ground coriander 1 tablespoon
  • Chicken Egg 1 piece
  • Toasted Sesame 1½ tablespoons
  • Mild Chili Spice 1 piece
  • Grated Ginger Root 1 teaspoon
  • Sesame Oil 2 teaspoons
  • Soy Sauce 2 teaspoons
  • Honey 1 tablespoon
  • Lime 1 piece
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat a deep fryer or fill a deep skillet one-third full with sunflower oil and heat to 375°F. If you don't have a thermometer, you can check the temperature by dropping a piece of bread into the oil. At the right temperature, the bread will brown in about 40 seconds.

Step 2

In a blender, combine the shrimp, chopped green onions, chopped and seeded chili, peeled and chopped ginger root, and minced garlic. Add spices to taste. Blend for a few seconds until smooth.

Step 3

Fill the wonton wrappers with the mixture and brush the edges with egg white. Fold into triangles. Fry the wontons in the oil for 2–3 minutes until golden brown.

Step 4

Meanwhile, prepare the chili jam. In a blender, combine the chopped, seeded chili, chopped green onions, grated ginger root, sesame seeds, sesame oil, soy sauce, and honey. Squeeze in the lime juice. Blend until smooth.

Step 5

Place the wontons on a kitchen towel to absorb excess oil. Arrange on serving plates. Serve the jam in a sauce boat. Garnish with coriander and sprinkle with sesame seeds.
