Shrimp with Tomatoes and Feta
Ingredients
- Olive Oil 2 spoons
- Onion ½ heads
- Ground ancho chili pepper ½ pieces
- Uzo 2 spoons
- Crushed Tomatoes in Their Own Juice 15 oz
- Large tail-on shrimp 6 pieces
- Feta cheese 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Chopped Sage Leaves 0 oz
Step-by-Step Guide
Step 1
Preheat the grill in the oven. Heat oil in an ovenproof skillet and sauté the chopped onion and chili, seeded and deveined. Add the tomatoes along with their juice, stirring to break up the whole tomatoes into pieces. Season with salt and pepper, and simmer for four minutes.
Step 2
Arrange the peeled shrimp on top of the sauce. Drizzle with more sauce and cook for four minutes, until they turn pink. Then, place slices of feta cheese between the shrimp and put the skillet under the broiler. Bake for about two minutes, until the cheese melts.
Step 3
Remove from the oven. Heat the ouzo vodka over medium heat in a small saucepan, ignite it using a kitchen match, and pour it over the shrimp. Once the flames have died down, sprinkle the shrimp with chopped parsley.
