Shrimp with morels and mushroom butter

Ingredients

  • King Prawns 6 pieces
  • Morels 10 oz
  • Shallot 5 oz
  • Garlic 1 clove
  • Butter 5 oz
  • Thyme 0 oz
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Fresh morels can be substituted with dried ones: soak them for an hour in boiling water (700 ml of water for 60 grams of mushrooms) with a lid on, and then use some of the soaking liquid in your preparation.

Step 2

Finely chop 50 grams of fresh mushrooms and shallots. In a small skillet over medium heat, melt 15 grams of butter and sauté one-third of the chopped onions with minced garlic for a minute.

Step 3

Add the chopped mushrooms, sprinkle with thyme, and cook for two minutes. If the morels were dried, pour a little of the soaking water into the skillet and increase the heat to evaporate almost all the liquid.

Step 4

After eight minutes, transfer the onions and mushrooms to a bowl, mix in the remaining butter, season with salt and pepper, stir again, and let cool.

Step 5

Cut the shrimp shells along the back, remove the digestive tract, then make a cut in the shrimp itself and lay them out shell side down on a baking tray.

Step 6

Sauté the remaining shallots in 30 grams of mushroom oil until golden brown, then add the previously set aside mushrooms and cook them for an additional four minutes.

Step 7

Place a teaspoon of mushroom oil on each shrimp and bake in an oven preheated to 500°F for seven minutes.

Step 8

Evenly divide the remaining butter among the shrimp and return to the oven for ten seconds to allow the butter to melt. Serve with mushrooms and onions.
