Ingredients

  • Olive Oil 4 tablespoons
  • Peeled shrimp 25 oz
  • Lime Juice ¾ cup
  • Lime Zest 1 teaspoon
  • Serrano Chili 1 piece
  • White Onion 5 oz
  • Garlic 1 clove
  • Plum Tomatoes 5 oz
  • Olives stuffed with red pepper 5 oz
  • Chopped Cilantro (Coriander) 0 oz
  • Lime 1 piece
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper. Cook for about 3 minutes, until the shrimp are opaque in the center. Transfer to a large bowl.

Step 2

Add lime juice and zest to the skillet, warm slightly, and pour over the shrimp.

Step 3

Add finely chopped onion, minced chili, crushed garlic, and the remaining 2 tablespoons of olive oil. Mix well and let sit for 30 minutes.

Step 4

Add diced tomatoes, olives, and cilantro. Cover with plastic wrap and refrigerate for 1-2 hours.

Step 5

Serve the appetizer in martini glasses and garnish with lime wedges.
