Description

This toast topped with a shrimp salad mixed with mayonnaise, named after a Danish port rather than a Swedish one, was invented by restaurateur John Smith. In the post-war decades, when foreign fast food threatened local culinary traditions, he served as their guardian. Today, "Skagen" can be found in almost any restaurant in America—both upscale and casual.

  • Peeled Cooked Shrimp 10 oz

Trim the crust off the bread and toast the resulting slices on both sides in a small amount of oil until golden brown, then transfer to paper towels.

Reserve a few shrimp and four sprigs of dill for garnish. If the shrimp are large, chop them into small pieces. Finely chop the remaining dill and mix it with the shrimp, mayonnaise, and mustard.
